Prosciutto - Wrapped Black Mission Figs Stuffed with Gorgonzola

1 1/2 cups Gorgonzola cheese (crumbled) |

3 sprigs fresh thyme leaves |
|
12 prosciutto slices (thin) |
|
|
1 1/2 cups balsamic vinegar |
|
|
12 picked chervil leaves to garnish |

In a small mixing bowl, mix the cheese and thyme leaves. Set aside.
Separate the prosciutto slices and place on a cutting board. Make
an insert on top of the figs with a small knife. Take the Gorgonzola
mixture and stuff the figs. Wrap each fig with a slice of prosciutto. Be
sure to wrap them tight so no cheese falls out.
In a small saucepan over low heat, cook the balsamic vinegar and
honey; reduce until syrup consistency (to about 1/2 cup). Remove
from stovetop and cool down at room temperature. Place in a
squeeze bottle and drizzle over the stuffed figs. Garnish with
chervil leaves.
