2 Cups Uncooked Quinoa
Just under 4 Cups Chicken Stock
1 Cups Cucumber, skinned and seeded, cut into 1/2 inch chunks
1 Cup Grape Tomato, cut in half
1 Cups Cooked Corn
1 Cup Raw Broccoli in small pieces
1 Cup Red Pepper cut into 1/2 inch chunks
1/2 Cup Green Olive, with Pimento, cut in half or sliced
1/2 C Roasted Pine Nuts
1/8 Cup Ribbon Chopped Fresh Basil
1 Cup Crumbled Feta Cheese
Brianna's French Vinegrette Dressing
Can also add:
Celery
Garbanzo beans

Bring Chicken Stock to a boil, add Quinoa, cover then reduce to simmer until done. Let cool before adding remaining items, then stir well.
