Chinese Chicken Salad

1 ginger sliced and mashed |
|
|
|
|
1 boneless breast of chicken |
|
|
|
1/4 cup green onions, sliced |
|
|
1/4 cup Chinese parsley, chopped |
|
|
|

2 tsp sesame seeds, toasted |

Combine first six ingredients and m arinate chicken in the sauce for 10 to 15 minutes. Fry chicken in canola oil until done. Place on absorbent paper towel, set aside to cool. When cool, shred chicken and place in a large bowl or platter. Combine the remaining ingredients except for the sesame oil and seeds. Let rest for a few minutes. Sprinkle the sesame seeds and oil into the salad and toss. Salt and pepper to taste. |
