Halibut with Roasted Onions and Peppers

1/4 teaspoon white pepper |
|
6 1-inch thick halibut steaks |
|
3 red bell peppers, cut into 1/4 inch strips |
|
2 Walla Walla onions,cut into 1/4 inch strips |

2 tablespoons orange zest, slivered |
|
|
|
2 teaspoons fresh thyme, minced or I teaspoon dried |
|
2 tablespoons lime iuice, freshly squeezed |

Marinating time 3O minutes. Preheat oven to 4OO degrees
Combine lime juice, 1/4 cup olive oil and white pepper in a large, non-reactive flat
pan. Add halibut steaks and turn to coat both sides. Cover and marinate 30 minutes.
Place red peppers, onions and orange zest in a large baking dish. Toss to coat with
2 tablespoons oil. Bake until vegetables start to brown and caramelize, stirring
occasionally, about 20 minutes.
Mix garlic into vegetables. Push vegetables to sides of dish. Remove fish from
marinade, pat dry and place in center of baking dish. Discard marinade. Sprinkle fish
with thyme. Spoon vegetables on top of fish and bake until fish is opaque in center, 10
to 12 minutes. Divide fish and vegetables among plates. Drizzle with lime juice, season
with salt and pepper and serve |
