Island Spiced Rice

1 tbsp. Butter
2 cups chopped celery
1 small onions chopped
2 cloves garlic- minced
4 cups water
2 chicken bouillon cubes
1/2 cup raisins
1 tbsp brown sugar
1 tsp. curry powder
1/4 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. pepper
1 1/2 cups uncooked basmati rice
1/2 cup chopped pecans or walnuts toasted
1/2 cup chopped apple

Melt butter in a large saucepan add celery, onion and garlic. Sauté over medium heat until tender. Add water and next 7 ingredients. Cover and bring to a boil. Stir in rice; cover, reduce heat and simmer 20 minutes. Remove from heat and let stand 10 minutes. Stir in pecan and apple.
