1 cup plus 2 tbsp. flour
6 oz. uncooked quick or old fashioned oatmeal
1/3 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
1 cup skim milk
1 egg
1/4 cup vegetable oil
1 cup blueberries
TOPPING:
1 tbsp. sugar
1 tsp. ground cinnamon

Each serving provides - 1 bread; 1 fat exchange; 65 calorie optional exchange; 188 calories. Makes 12 servings. Preheat oven to 425 degrees. Line 12 - 2 1/2 inch muffin pan cups with paper baking cups. In medium mixing bowl combine flour, oatmeal, sugar, baking powder and salt. In small bowl, using a fork, combine skim milk, egg and vegetable oil. Add to flour mixture and beat until ingredients are blended. Fold in blueberries. (If using frozen, thaw before using). Pour an equal amount of batter into each cup (each will be about 2/3 full). TOPPING: Combine sugar and cinnamon and sprinkle evenly over muffins. Bake for 20 to 25 minutes (until lightly browned and toothpick inserted in center, comes out dry.
