Rhubarb (Apple) Cake

1/2 cup butter, softened
1 1/2 cup white sugar
1 egg
1 cup milk
1 Tblsp white vinegar
1 tsp vanilla
2 cups flour
1 tsp baking soda
dash salt
3 cups rhubarb
1 Tblsp flour
TOPPING
1 cup brown sugar
2 tsp cinnamon
2 Tblsp butter, melted

Preheat oven to 350 and grease a 9" x 13" pan. Beat butter and sugar until smooth. Add egg. Add vinegar to milk and stir, then add to mixture, along with vanilla and beat until all combined. In a small bowl, combine flour, baking soda and salt. Add to mixture and beat until smooth. Dice rhubarb into small pieces and sprinkle the 1 Tblsp flour on it and stir. (Can also use frozen rhubarb if fresh is not available). Stir the rhubarb into the cake mixture. Spread into greased pan. TOPPING: Mix brown sugar and cinnamon. Sprinkle over cake then drizzle melted butter over it. Bake for 30 - 45 min (depending on your oven) unti a toothpick comes out clean. This cake also freezes nicely.
