Pizza - Goat Cheese and Zucchini

4 tablespoons extra-virgin olive oil, plus olive oil for drizzling |
|
2 small zucchini (courgette), trimmed and cut into thin julienne strips |
|
2 leek, white part only, carefully rinsed and thinly sliced crosswise |
|
|
salt and coarsely ground pepper |
|
|
2 teaspoon dried oregano, crumbled |

In a large sauté pan over medium heat, warm the 4 tablespoons olive oil. Add the zucchini, leek and garlic and sauté, stirring occasionally, until the vegetables are barely tender, 3-4 minutes. Season to taste with salt and pepper and remove from the heat. Set aside.
Distribute the zucchini-leek mixture evenly over the dough. Dot the pizza with the goat cheese and sprinkle with the oregano.
To cook, heat bbq on the lowest setting (Approx 400 degrees) for 10 minutes, then place pizza and bbq. Cook for 10 -15 minutes, checking the bottom of the crust to insure it's not burning but you want a nice crustly crust. |
