Pumpkin Cranberry Bread

3 C. all-purpose flour
1 Tbs. plus 2 tsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
2 C. granulated sugar
1 can (15 oz.) pumpkin puree
4 eggs
3/4 C. vegetable oil
1/2 C. orange or apple juice
1 C. dried cranberries

Preheat oven to 350. Prepare two 9 X 5 inch loaf pans. Combine flour, baking soda, spice and salt in large bowl. Combine sugar, pumpkin, oil, eggs and juice in large mixer and blend. Add flour mixture to blender bowl and stir till moistened. Fold in cranberries. Divide between loaf pans and bake in 350 oven 55-60 minutes will toothpick comes out clean. Cool pans on wire racks before removing bread from loaf pan.
