2 Chicken breasts
2 cloves garlic, minced
2 cups Chinese or regular broccoli, chopped in small pieces
2 eggs
1 package Pad See Ew, cut into 1/2 strips and separate (micro to soften strips)
2 tblsp light soy sauce
2 tblsp dark sweet soy sauce
2 tblsp sugar
2 tblsp fish sauce
2 tblsp oyster sauce
2 tsp rice vinegar

Before starting the recipe, ensure all ingredients are ready to go since you will just be tossing them into the wok one after the other. Cut chicken breasts into small pieces and put in a bowl. Add a little soy sauce to the meat and stir. Let marinate for a few minutes or longer. Mince garlic, chop broccoli, slice noodles and make sauce by combining the soy sauce, sweet soy sauce, sugar, fish sauce, oyster sauce and rice vinegar. Heat wok until it is white inside, then add oil. Add chicken to the wok, stirring while it is cooking. Turn the heat down slightly and add the garlic, still stirring constantly. Then add the broccoli and continue to stir while the broccoli is cooking. Move everything to one side of the wok and crack the 2 eggs on the open side, then mix the egg white and yokes together and cook them through before mixing it with the meat mixture. Add the pad see ew noodles and toss it with the rest of the mixture. Make sure the noodles are pliable before you put them in the wok. If they are not, you can put them in the micro. After adding the noodles, you want to limit the stirring as you want them to brown a bit. Stir occasionally so that you brown all the noodles. It is ready when the noodles are soft, about 5 minutes. Pour the sauce all over everything that’s in the wok, stir for a min and then it’s ready to serve.
