Asiago Crusted Halibut Cheeks

2 lbs Fresh Alaskan Halibut Cheeks
2 Eggs
1/4 cup Whole Milk
1 1/2 cup Asiago Cheese, grated
3/4 cup plain Bread Crumbs
2 tsp Black Pepper
1 tsp Paprika
2 Tbsp Butter

In a small bowl, beat milk and egg together until the consistency is smooth. In a separate bowl, stir together asiago cheese, bread crumbs, pepper, and paprika. Coat cheeks in egg wash, and dip in asiago mixture until covered very well. In a non stick pan heat oil and butter over medium heat, cook cheeks about 3-4 min per side or until breading is golden and crispy. Garnish with lemon.
