Citrus Marinated Chicken

2 each pieces of chicken, thighs, breasts, legs
8 garlic cloves, finely chopped
1 tbsp. mild chili powder
1 tbsp. paprika
2 tsp. ground cumin
Juice and rind of 1 orange
Juice of 3 limes
1/2 cup beer or tequila
salt and pepper
1/2 bunch cilantro, coarsely chopped
2-3 tbsp. extra virgin olive oil
Pinch of sugar

Place the chicken in a nonmetallic dish. To make the marinade, mix the remaining ingredients together in a bowl, seasoning with salt and pepper. Pour most of the marinade over the chicken, turn to coat well, then leave marinade for at least an hour at room temperature. If possible leave for 24 hours in the refrigerator to marinate. Keep a little marinade to baste with. Remove the chicken from the marinade and pat dry with paper towels. Place the chicken on a pan and place under preheated broiler for 20-25 minutes, or barbeque turning once, until chicken is golden brown on the outside and cooked through. Brush with marinade occasionally. To test if it is cooked, pierce a thick part with a skewer – the juices should run clear.
