Beefy Broccoli & Cheese Soup

1/4 Lb ground beef
2 cups beef broth
1 Lb broccoli flower head, chopped
1/4 cup onion, chopped
1 cup milk
3 Tbsp flour
6oz sharp cheddar cheese, graded
1 1/2 tsp fresh oregano, chopped or 1/2 tsp dried oregano
salt & pepper to taste

Brown beef in a small skillet, drain fat and set aside. Bring broth to a boil in a medium sauce pan over high heat, add broccoli and onion, then reduce to simmer for 10-15 minutes or until broccoli is tender. In a small bowl combine milk and flour until smooth. Add milk mixture and beef to broth and simmer to thicken soup. Add cheese, oregano and season with salt & pepper to taste.
