Beefy Broccoli & Cheese Soup

1 Lb broccoli flower head, chopped |
|

6oz sharp cheddar cheese, graded |
|
1 1/2 tsp fresh oregano, chopped or 1/2 tsp dried oregano |

Brown beef in a small skillet, drain fat and set aside.
Bring broth to a boil in a medium sauce pan over high heat, add broccoli and onion, then reduce to simmer for 10-15 minutes or until broccoli is tender. In a small bowl combine milk and flour until smooth. Add milk mixture and beef to broth and simmer to thicken soup. Add cheese, oregano and season with salt & pepper to taste. |
