Banana White Chocolate Macadamia Nut Pancakes with Coconut Syrup

COCONUT SYRUP:
1 can of reduced coconut milk
1/2 cup sugar
1 tsp vanilla extract
PANCAKES:
1 cup flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
1 cup buttermilk
2 Tbsp canola oil
1/3 cup chopped macadamia nuts
2 large banana, slided
1/2 cup white chocolate chips

COCONUT SYRUP: Mix the ingredients in a small saucepan. Cook the mixture over medium heat, stirring it constantly, until it comes to a boil. Reduce the heat to medium and let it simmer for 20-25 minutes until it thickens into a syrup. Use it immediately or let it cool and then store it in a sealed container in the refrigerator. PANCAKES: Mix the dry ingredients. Stir in the wet ingredients. Heat a griddle to medium heat, add butter to coat pan, using 1/3 cup pour batter into pan, then top each with 4 slices of banana's, white chocolate and a sprinkle of macadamia nuts, cook the pancakes until they are golden brown on each side. Serve the pancakes with coconut syrup.
