Turkey with Black Bean Pumpkin Chili

1 medium sweet yellow pepper, chopped |
|
|
2 cans (15 ounces each) black beans, rinsed and drained |
|
1 can (15 ounces) solid-pack pumpkin |
|
1 can (14-1/2 ounces) diced tomatoes, undrained |
|
|
|
2 teaspoons dried parsley flakes |
|
|
1-1/2 teaspoons ground cumin |
|
1-1/2 teaspoons dried oregano |
|
|
|

In a 5 quart pot, heat oil over medium-high heat, add turkey and brown, then remove to a bowl and set aside. Add onion and pepper to the pan and cook until tender. Add garlic; cook 1 minute longer.
Add turkey back in and remaining ingredients, stir to combine. Cook, covered, on low 4-5 hours. Serve with broken tortilla chips. |
