Cook pasta according to package directions. Drain, reserving 3/4 cup pasta water.
Meanwhile, in a large skillet, add olive oil and cook chicken over medium heat until lightly browned; reduce heat to medium-low. Add red pepper flakes, pumpkin, milk, salt and pepper; cook and stir until heated through. Add pasta stir in cheese and enough pasta water to thin sauce a bit. If desired, sprinkle with cilantro.
