4 Yellow Potatoes
2 C Parmesan, grated
1 Egg, beatened
1 C Flour
1 Tbsp Salt

Boil whole potatoes, skin on, once just barely done remove from water to cool. Once cooled peal potatoes, then press through a rice maker onto a clean counter. With a spatchua spread out to about to about 1" thick. Add salt then parmesan. Using the spatchua chop ingredients into potatoes. Add flour and chop in. Add egg then mix and kneed a few times. Chop a bit off them roll into a 3/4" roll. Cut 3/4" chunks, run each over a Gnocchi board. Once all completed place gently in boilng water until they raise to the top. Remove using a strainer spatchua to a bowl, top with Ragu Sauce the more Parmesan.
