1 Green Apple, Cored, Sliced |

1/2 cup Crumbled Blue Cheese |

1/2 Cup Candied Pistachios |

4 Cups Italian Mixed Greens |

1/2 Cup Extra Virgin Olive Oil |

1/2 Cup Raw, Shelled Pistachios |

CANDIED PISTACHIOS:
In a medium sauce pan, bring water to boil over medium heat. Add pistachios to blanch for 1 minute, drain. Transfer to a small bowl and add sugar and toss to combine. In a medium pan, heat oil over medium-high heat. When the starts to smoke pour in the pistachios mixture and cook until pistachios are golden brown, stirring often, do not burn. Pour the mixture onto a plate and break part the pieces stuck together.
VINAIGRETTE:
In a small bowl or jar, whisk together mustard, vinegar, oregano, rosemary, garlic, salt and pepper. Slowly whisk in olive oil until combined.
SALAD:
In a large bowl, combine apple, pear, blue cheese, pistachios and greens. Toss with vinaigrette. Serve on chilled plates.
