Salted Caramel Fudge Truffles

1/4 cup unsalted butter
14 oz sweetened condensed milk
1/2 cup brown sugar
4.4 oz white chocolate bar, broken into pieces
1/2 teaspoon sea salt
2 - 4.4 oz good quality milk chocolate bar

In a pot add the butter sweetened condensed milk and brown sugar, heat on medium low while stir, when the sugar is melted, turn heat up to medium high and stir consistently until it starts to boil, remove from heat and stir in white chocolate. Pour into a bowl wrapped with plastic wrap and refrigerate for 3-4 hours to firm up. Leave the caramel fudge at room temperature for 5 minutes or so. Scoop out tablespoons of the caramel fudge and roll into a ball using your hands. Melt milk chocolate in a double boiler Dip each ball into the melted milk chocolate. Use a fork to scoop out the ball and place on an oven tray lined with baking paper. Repeat with remaining caramel fudge truffles.
