Pasole Stew with Green Chile

3 quarts water
2 cups dry pinto beans
1-1/2 to 2 lbs pork loin top loin roast, cut in bite-sized pieces
1 small onion, halved, sliced in thin rings
1 tbsp minced garlic
1 bay leaf
1 Serrano chile, whole, sliced lengthwise
1 tbsp salt
1 tsp dry leaf oregano, crushed
29-oz can white hominy, with liquid

In pressure cooker, bring water to a fast boil. Add all ingredients. Cook until meat, beans, and hominy are tender (over medium heat) about 1 hour 25 minutes, covered, under pressure. Add hot water in small amounts as needed after cooking. Remove bay leaf and Serrano chile. Mix well.
