1-1/2 to 2 lbs pork loin top loin roast, cut in bite-sized pieces |
|
1 small onion, halved, sliced in thin rings |
|
|
|
1 Serrano chile, whole, sliced lengthwise |
|
|
1 tsp dry leaf oregano, crushed |
|
29-oz can white hominy, with liquid |

In pressure cooker, bring water to a fast boil. Add all ingredients. Cook until meat, beans, and hominy are tender (over medium heat) about 1 hour 25 minutes, covered, under pressure. Add hot water in small amounts as needed after cooking. Remove bay leaf and Serrano chile. Mix well. |
