1 C Unsalted Butter, room temp
3 C Confection sugar
2 tsp Vanilla Extract
3/4 C Finely Chopped Pecans
3/4 tsp Salt
2 1/4 C Flour
3 Tb Shortening or nonstick spray

Preheat oven to 375 degrees. Combine the butter and 2 ½ C confection sugar in a bowl. Using a mixer, mix on high to cream together until well incorporated. Add vanilla, pecans, salt and flour and beat until just blended. Lightly grease a baking sheet, divide the dough into 12 equal pieces. Between lightly floured palms, roll each piece into a ball. Place the balls on the prepared baking sheet. Place in oven, bake until cookies are light brown on the bottom, 12-15 mins. Remove from oven and let cool slightly on a rack. While the cookies are still warm but not hot, roll them in some or the remaining ½ C confection sugar to coat completely. Set aside to cool on a rack. When cool roll again in the sugar until well coated and evenly powdered. The cookies may be stored in a airtight tin at room temp. for 7 days.
