Rinse artichokes under cold running water; drain well. Pat dry with paper towels. Finely chop artichokes, place in a medium bowl, add cheese, pepper, celery and mayo, mix well. Spoon artichoke mixture evenly onto each melba rounds; place on a large cookie sheet, then broil 6” from heat, about 45 sec or until cheese mixture is hot and bubbly. Sprinkle with paprika and serve. |
