Smoked Mushroom Mousse with New Potatoes

8 Small Red New Potatoes
2 Tb Dry Sherry
1 tsp Salt
1/2 tsp Pepper
7 oz Mascarpone Cheese
1/4 C Sour Cream
1/4 Whipping Cream
1/4 C Fresh Chives, finely chopped
Olive Oil
1/2 Lb Crimini Mushrooms

Wash red new potatoes and boil till done. Set aside to cool. Wash mushrooms and place in a food processor. Pulse until thoroughly mined but not a complete smooth paste. Add olive oil to a pan and heat on high, when pan is very hot add mushrooms and sauté stirring several times until most of the liquid evaporates. When the pan is almost dry add sherry and stir to remove any bits from the bottom of pan. Cook until evaporated, about 1 min. Stir in the salt and pepper and cool completely. In a bowl combine mascarpone, sour cream and whipping cream, using a electric mixer mix on low. When fully combined, raise speed to med-high and whip for no longer then 30 sec. Mix mushroom and mascarpone mixture together. Cut the potatoes in half. Using a melon spoon, scoop out a small amount of potatoes out of the center. Place a scoop the mushroom mascarpone mixture in the center of potatoes and sprinkle with chives. Serve
