Fat Pasta Tubes with Italian Sausage and Tomatoes

1/3 C Olive Oil
3/4 lb Sweet Italian Sausage
3/4 lb Hot Italian Sausage
1 Sweet Onion, diced
4 Garlic Cloves, minced
1/2 C Dry Red Wine
28 oz can Whole Tomatoes, peeled and with their juice
1 lb Dry Rigatoni
1 C Smoked or plain Ricotta Cheese
1/2 C Pecorino Romano Cheese
1 Tbsp Fresh Oregano, chopped
1/4 tsp Pepper

In a large skillet, heat olive oil then add onion and brown, add garlic and cook for 2-3 minutes more. Remove onion & garlic, then add sausages to brown and crumble into small pieces. Add onion & garlic back in pan then add wine and cook until evaporated, about 3 minutes. Put the tomatoes with juice in a small bowl and break up with hands. Add to the pan and bring to a boil, reduce the heat to low and simmer for 25 - 30 mins. In a large pot of water, bring to a boil and add 5 tsp of salt and pasta and cook until Al Dente. Using a wire mesh strainer transfer pasta to the pan with sauce. Add ricotta, percorino and oregano, stir till ricotta is mixed in, then add some of the pasta water to make more of a sauce. Toss to mix well. Season with pepper and serve
