3 Large fully ripe avocados, peeled and pitted
1 tomato, seeded and finely diced
1/3 onion, finely diced
1 fresh jalapeno chile
3 Cloves garlic, finely minced
1 pinch salt
1 pinch pepper
3 limes, juiced

In a large bowl, mash the avocados with a fork, potato dish masher, or other hand implement until the mixture is generally smooth, but with some chunks left for texture. Add the tomato, onion, and the chile, if using, and mix thoroughly Season with the garlic and with salt and black pepper (if used) to taste. Use a mortar and pestle, if you have one, to blend these seasoning ingredients before adding them. Add the lime or lemon juice and mix well. Serve the guacamole within 2 hours of preparing it. To store guacamole, press plastic wrap directly onto its surface, to prevent the discoloration that occurs from contact with air, and place in the refrigerator. Serve at room temperature
