Oatmeal, Peacan & Date Cookies

1 cup (2 sticks) butter, softened |
|
1/2 cup brown (splenda) sugar, firmly packed |
|
|

2 teaspoons vanilla extract |
|
1-1/2 cups whole wheat flour |
|
|
|
|
1 lb of seedless dates, chopped |
|
3 cups Old Fashioned Oats (uncooked) |

|
Heat oven to 350* F. In a large bowl, beat together butter and sugars until creamy. Add eggs and vanilla, beat well. Add combined flour, baking soda and salt, mix well. Add and stir in pecans, dates and oats. Note: When using an electric chopper to chop the dates, it is necessary to add about 1/2 cup of water to do it more efficiently. Bake 2 – 1/2 “ cookies on non greased cookie sheet at 350 degrees for about 12 minutes. |
