Gullivers Spinach Souffle

1 Lb Frozen Spinach, defrosted
1 1/2 C Warm Milk
1/2 C Bacon, finely chopped
1/2 C Chopped Onion
1 Garlic Clove, Finely Chopped
1 tsp Salt
1/4 tsp Pepper
1/3 C Flour

Sqeeze spinach as dry as possable and set aside. Cook bacon (do not brown). Add chopped onions, cook until translucent. Add garlic, salt, pepper and flour. Stir continuously for about 2 mins. Add milk and whip until smooth. Stir and cook for two more mins. Add spinach - cook for 5 more mins. Stir occasionally. Cover top with melt butter until ready to serve.
