Sticky Thai Chicken

4 large red chillies, seeded and chopped |
|
1 tbsp grated fresh ginger |
|

8 chicken thigh fillets, halved |

Heat a frying pan. Medium heat. Add the oil, chillies and ginger and cook
for 1 minute. Add the lime juice, fish sauce and brown sugar and cook,
stirring for 1 minute. Increase the heat. Add the chicken and cook for 8
minutes. Turn the chicken and cook for another 5 minutes or so until golden
sticky and cooked through. Sprinkle with the chopped cilantro leaves and
serve with jasmine rice.
