Sticky Thai Chicken

2 tsps vegetable oil
4 large red chillies, seeded and chopped
1 tbsp grated fresh ginger
3 tbps lime juice
3 tbsps fish sauce
1/3 cup brown sugar
8 chicken thigh fillets, halved
2 tbsps cilantro leaves

Heat a frying pan. Medium heat. Add the oil, chillies and ginger and cook for 1 minute. Add the lime juice, fish sauce and brown sugar and cook, stirring for 1 minute. Increase the heat. Add the chicken and cook for 8 minutes. Turn the chicken and cook for another 5 minutes or so until golden sticky and cooked through. Sprinkle with the chopped cilantro leaves and serve with jasmine rice.
