Grilled Halibut Steaks

3/4 C Olive Oil
3/8 C Lemon Juice
1 tsp Lemon Zest
4 Clove Garlic, chopped
1/2 tsp salt
1/2 tsp Pepper
1/2 tsp Fresh Oregano
1 lb Halibut

In a small bowl whisk together olive oil, lemon juice, lemon zest, garlic, salt, pepper and oregano. Spoon 1/2 of the mixture into a shallow dish (the other 1/2 will be used for basting on grill) just large enough to hold the fish. Rinse the fish, pat dry, then place in dish. Spoon the sauce from the bottom of the dish to over ther fish. Cover and refrigerate for 45 mins. Remove 15 mins before grilling. To Grill place the fish skin side up over Direct meduim heat. Turn after 5 minutes, then spoon the remaining marinate sauce over fish and into the crack in the fish meat. Continue to cook until flesh is opaque throighout and firm to the touch.
