Pineapple Tomatillo Salsa

1 cup finely diced fresh pineapple (about 1/4 small pineapple)
1/2 cup finely diced tomatillos (about 3 tomatillos)
1/4 cup finely chopped red onion
1 Jalapeno chile, seeded and finely
3 tbsp fresh lime juice
1 tbsp Honey
2 Tbsp Olive Oil
Kosher salt & Pepper

Combine the pineapple, tomatillos, onion, jalapeno, cilantro, lime juice, honey, and oil in a medium bowl and season with salt and pepper. This can be made up to 1 day in advance and refrigerated. Bring to room temperature before serving.
