In a small saucepan, combine sugar & water over medium heat and simmer until sugar is dissolved. Cover and refrigerate. In a food processor, blend juice and berries. Adjust sweetness by adding the sugar water as needed. Add Creme de Cassis and chill for 1-2 hours. Just before serving, add club soda to give the soup a sparkling twist. Service in chilled soup bowls and finish with a swirl of buttermilk. |
