3-4 Roma Tomatos, finely diced |
|
1 Red Pepper finely diced |
|
2 Green Onions, finely chopped |
|
|
1/2 C Kalamata Olives, sliced |
|
3 tbsp finely chopped fresh italian parsley |

Cook the orzo according to directions and use chicken broth instead of water. Strain and let it cool. Add chopped roma tomatoes, chopped red peppers, green onions, crumbled feta cheese, sliced kalamata olives, and italian parsley.
Then mix together with lots of olive oil and a little canola oil until slighlty coated. Then add salt/pepper and some fresh squeezed lemon juice to taste. Serve chilled.
