Hot Spinach Salad

2 Bundles of Spinach, washed
4 slices Bacon, cooked and rough chopped
1 Shallot, chopped
1/4 C Olive Oil
1/4 C Red Wine Vinegar
8 Mushrooms, thickly sliced
2 Tbls Sugar
1/2 C Parmesan Cheese, graded
Sliced Almonds, optional

Place Spinach in a large bowl, set aside. Heat a small skillet over medium high heat, all Olive Oil, Red Wine Vinegar, Shallot and Sugar. Saute for 2-3 minutes, then add Mushrooms. Cook until Mushrooms are about 3/4 cooked, about 3-4 minutes, then remove from heat and pour over Spinach, toss well. Place Spinach in 2 bowls without bring too much of the sauce over, add bacon on top and sprinkle with Parmesan Cheese, serve.
