Melt the butter in a large saucepan. Add the onion and cook gently until soft. Stir in the bacon and garlic.
Pour the stock or water over the garlic and onion, add the potatoes, cover and cook for 15 min. Add the cabbage and cook for a further 5 minutes.
Remove lid and sprinkle the back pepper. The soup should be thick; if you need to thicken, remove half the greens and potato and mash before returning to the pan.
Season and serve in bowls
