Courgettes with Dill

4 Tbsp olive oil
1 oz butter
1 onion chopped
1 tsp garlic crushed
1 lb courgettes, topped, tailed and sliced in thick rounds
1/2 tsp freshly gound black pepper
2 tsp paprika
1 Tbsp dill, chopped no stalks
Salt to taste

Heat Oil and butter in a large frying pan. Gently cook the onion and garlic until soft. Turn up the heat, add the courgettes and black pepper and toss Cook for 5 to 10 min. turning the courgette slices to cook both sides When the courgette slives are browning, add the paprika and dill. Season and serve
