Chicken in Batter with Honey and Mustard

3 chicken breasts, cut into 1 in cubes
Salt and freshly ground black pepper
2 eggs
flour to coat
4 Tbsp olive oil
8 Tbsp Honey
1 tsp french mustard
1 tsp soy sauce

Place the chicken pieces in a bowl. Season. Break the eggs over the chicken pieces and mix in thoroughly, using your hands. Add enough flour to make the thick coating over the chicken. The egg and flour mixture should be of a consistency where it stops just short of dripping Heat the oil in a frying pan and fry the chicken until golden, turning frequently, for about 15 min Remove from the heat; sprinkle with salt and pepper Blend the honey with the mustard and soy sauce. Drizzle the honey mixture over the chicken and serve immediately
