Rappini Sautéed with Italian Sausage

6 – 8 authentic Italian sausage
2 bunches of rappini
3 cloves of garlic
Pepper flakes
Olive oil
Salt & pepper to taste

Line large skillet with olive oil Cut sausage into bite size pieces (1/2 inch) Cook for 15 to 20 mins Cut stalks of rappini off, clean and wash and drain water. Add rappini in skillet on top of sausage Top with crushed garlic, dash of pepper flakes, salt & pepper to taste. Cover and cook for 15 mins, then stir. Cook dish for 30 to 45 mins, mixing mixture every 10 mins on med to low heat. Serve warm
