Cannelloni Filling

1.5 lb fresh ricotta
1 cup soft mascarpone cheese
½ cup confectioner’s sugar
2 tablespoon minced candied orange peel
1 teaspoon orange-flower water
1/2 teaspoon cinnamon
1/3 cup shelled unsalted pistachios (not dyed red), chopped & lightly roasted
4 oz bittersweet mini chocolate chips (not unsweetened)
15 – 20 premade cannoli shells

In a large bowl, mix all ingredients until blended, add a ¼ of nuts Spoon filling into pastry bag and pipe some into 1 end of a cannoli shell, filling shell halfway, then pipe into other end. Repeat with remaining shells. Dip ends into remaining crushed nuts for garnish
