Crostini with Cream Cheese, Grilled Scallions and Tomatoes

1 loaf Italian or French bread, cut into 1/4-inch thick slices
Olive oil
Salt and freshly cracked black pepper
2 cups cherry tomatoes
Canola oil
8 oz cream cheese, soften
1 bunch scallions

Preheat the grill to high heat. Brush the tomatoes and scallions with canola oil and grill in a pan until slightly charred. Remove and coarsely chop. Brush the bread with olive oil and sprinkle with salt and pepper, to taste. Place on the grill and cook until lightly toasted on one side. Remove the bread from the grill and spread cream cheese and top with the tomato and scallions. Serve
