Artichokes with Potatoes - Greek Style

1 medium Onion, sliced
3 Garlic cloves, crushed
3 Tbl Olive oil
1/2 cup fresh parsley, Chopped
1 Lb New potatoes, unpeeled and quartered
2 cups Chicken stock, fresh or canned
3 cups Fresh or Frozen artichokes thawed
Salt and pepper to taste

Saute the onions and garlic in the oil until almost transparent. Add the parsley, potatoes and chicken stock and cook, covered, for 10 to 15 minutes or until the potatoes are just barely tender. Add the artichokes and simmer, covered, for another 10 minutes. Add salt and pepper to taste.
