Crab and Gouda Omelet

3 Eggs
1 handfull of Fresh Crab
1 Shallot, minced
3/4 C Gouda Cheese, grated
Butter for pan
Pinch of Pepper

Beat eggs with 1 tablespoon of water and pepper well. In a pan the correct size for the omelet place some butter and heat pan over medium heat. Add eggs to pan, after a few seconds lift the sides to allow egg mixture to run onto pan. Once the egg mixture is almost cooked, add shallots, crab then cheese and turn heat to low. After 1 minute fold omelet in half and continue to cook on low until the cheese is melted. Remove from pan and serve.
