El Gaucho – Wicked Shrimp

1/2 cup butter, softened and divided
12 large prawns, peeled and de-veined
2 teaspoons garlic, minced
1 tablespoon Wicked seasoning
1/4 teaspoon Steak seasoning
1/4 cup white wine
1/4 cup light beer (Hefeweizen works well)
1/2 cup prawn stock
1 tablespoon Worcestershire sauce
1 baguette, sliced and toasted for dipping
WICKED SEASONING:
1 1/2 teaspoons garlic
1/2 tablespoon cayenne pepper
1/2 tablespoon black pepper
1 teaspoon kosher salt
1 teaspoon red pepper flakes
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano

WICKED SEASONING: - Combine all Wiched Seasoning together in a small bowl, set aside. In a large saucepan, over medium-high heat, add 1/4 cup of butter and melt completely. Add prawns and saute lightly for 2-3 minutes. Add garlic, Wicked seasoning, and El Gaucho steak seasoning, and coat completely. Add wine and beer, and deglaze the pan. Pour in prawn stock and Worcestershire sauce and reduce for 2 minutes. Add the remaining butter and swirl the butter until it is fully incorporated and the sauce is slightly thickened (whisk, don't scrape, especially if.using a nonstick pan) . Taste and adjust seasonings if desired. Toast slices of bread while preparing the shrimp. At the restaurant, sourdough bread is brushed with oil and then grilled, but this can easily be done in an oven at 350 for 6-8 minutes.
