Prosciutto Wrapped Figs with Gorgonzola & Balsamic

16 dried Figs
1/2 cup of gorgonzola cheese
8 pieces thinly sliced prosciutto
4 sprigs rosemary
Pepper
1 cup balsamic vinegar

Preheat oven to 425 degrees fahrenheit Half each piece of prosciutto lengthwise Cut a lengthwise slit down each fig Fill each fig with 1.5 teaspoons of gorgonzola cheese Wrap each stuffed fig with one piece of prosciutto Place figs on baking sheet and sprinkle with finely chopped rosemary and pepper Bake for 10-12 minutes While figs are in the oven, pour balsamic vinegar into a small saucepan and reduce to 1/3 cup Remove figs from the oven, place on serving platter, drizzle with balsamic glaze and serve warm!
