Prawns in Spices and Coconut Cream

2 1/2 Lb raw king prawns
3/4 cup coconut cream
1 teaspoon finely grated lime or lemon rind
1 tablespoon lime or lemon juice
2 teaspoons light soy sauce
1/2 teaspoon shrimp paste
1 tablespoon peanut oil
1 small onion, cut into 8 pieces chopped spring onion, to garnish
Peel and devein the prawns, leaving the tails intact. Combine the coconut cream, rind, juice, soy sauce and shrimp paste in a bowl. Heat the oil in a frying pan; add the onion and stir-fry over medium heat until soft. Add the prawns and stir-fry for 2 minutes. Add the coconut cream mixture and stir for 2 to 3 minutes, until the sauce has thoroughly heated through. Garnish with spring onion and serve with rice.
