Coffee Crusted Pork Chops with Bourbon Cream Sauce

1/4 C Finely Chopped Yellow Onion |

1 C Low Sodium Beef Stock |
|
|
1 tsp Fresh Thyme, freshly chopped |
|
|
|
|
1 tsp Finely Chopped Ground Dark Roasted Coffee |
|
1 tsp Finely Chopped Fresh Thyme |
|

4 Boneless Pork Lion Chops, about 1 inch think |

To Make the Sauce: In a medium saucepan over medium-high heat, melt butter. Add onions and cook until tender, about 3 minutes, stirring occasionally to prevent browning. Add garlic and cook for 1 minute more, stirring occasionally. Remove the saucepan from heat and carefully add the bourbon and return to heat. It might flame up and if so once the flame subsides, reduce the heat to medium and add beef stock and cream. Simmer until and 1/3 cup liquid remains, 15-20 minutes, stirring occasionally. Add thyme. Season with salt and pepper to taste. To make the Rub: In a small bowl, mix the rub ingredients with your fingertips. Allow the chops to stand at room temp. for 20-30 minutes before grilling. Lightly brush both sides of the chops with oil and season evenly with rub, pressing the spices into the meat. Grill over Direct Medium heat until barley pink in the center of the meat, 8-10 minutes, turning once. Remove from grill and let rest 3-5 minutes. Bring the sauce to a simmer and serve warm with chops. |
