Slice the eggplant into 1/4-inch thick slices.
Season with salt, pepper and garlic powder. Grill on BBQ until done.
Brush olive oil on both sides of the ciabatta.
Slice the bread open and place mozzarella 1 tablespoon of pesto, 1/4 cup arugula, 2 slices of tomatoes and eggplant on each sandwich.
Place on a panini press and close until the cheese melts and the bread is toasted.
Cut in half diagonally and eat immediately. |
