4 Yams, about 1/2 Lb, unpeeled and well scrubbed |

3/4 C Firmly packed Dark Brown Sugar |

Bring a large pot ¾ full of water to a boil. Add yams and simmer until tender but slightly resistant when pierced with a fork, 35-45 mins. Drain and let cool. Peel yams and slice off ends. Cut crosswise into slices about 2: thick. Preheat oven to 400 degrees. Grease large 9” baking dish and arrange yams, cut side down in it. To make the glaze, in a saucepan over medium heat, combine the brown sugar, rum, butter and ground spices. Simmer, stirring until sugar dissolves and the syrup is slightly thickened about 3 mins. Pour evenly over the yams. Bake, basting about every 5 minutes, until a glaze forms on top, about 15 mins. |
