Greek Style Sausage Rolls

1 Lb Italian Sausage
1/4 C Onion, finely chopped
1/4 Lb Feta Cheese, crumbled
1/4 C Italian Parsley, finely chopped
1/8 tsp White Pepper
1 Egg, beaten
10 Sheets Phyllo Dough (17 x 13")
1/2 C Buter, melted
1 - 10 oz Frozen Chopped Spinach, thawed and drianed

In a large skillet, brown sausage and onion over medium heat. Drain fat and stir in spinach, feta cheese, italian parsley , white pepper and egg. Set aside. Preheat oven to 350 degrees. Unfold phyllo dough. Spread 2 sheet flat and brush with butter, add another sheet and brush with butter, repeat for a total of 10 sheets. Spread sausage-spinach mixture down the middle of phyllo sheets and 2” from each end. Fold each end towards the center then wrap the phyllo dough around mixture until you have a seal log. Brush melted butter on top and bake for 25-35 min or until golden brown. To serve, cut into 2” slices.
