Pork Fried Rice

2 Cups raw rice (long grain patna)
2 Cups cold water
3 eggs beaten
1 teaspoon salt
1/2 Cup diced barbecued pork
2 large dried mushrooms (prepare and dice)
1/2 Lb bean sprouts (wash and drain)
4 green onions chopped
2 tablespoon soy sauce
4 tablespoon oil

Use 2-quart pan with lid that fits tightly. Wash rice 4 to 5 times until water runs clear, drain well. Add 3 cups cold water. Cover with lid and bring to boil. Lid may be removed at this time for 1 to 2 minutes until most of the water is boiled away and top of rice is visible under a mass of bubbles. Turn heat to simmer, cover pan and steam for approximately 20 minutes. Heat 4 Tbsp. oil in frying pan until hot. Stir fry beaten eggs until set. Added diced barbecued pork, mushrooms, and bean sprouts; stir-fry for additional minute. Add cold rice and break apart with spatula; stir-fry for approximately 5 minutes or until rice is heated through. Add chopped green onions, soy sauce, and mix thoroughly. Serve hot.
