Carrots with Sesame Oil

1 ½ lb. Carrots
½ Cup Vegetable Broth
2 Green Onions
½ Clove Garlic
4 Tsp Fruit Vinegar
Salt to taste
White Pepper to taste
¼ tsp Sesame Seeds
½ tsp Honey
1 Tsp Sesame Oil
4 Tsp Soy Oil
1 Bunch Fresh Chives
1/4 C Cashew Halves

Wash carrots, peel, and slice. Bring vegetable broth to boiling. Add the carrots, and simmer for 7 minutes until al dente. Trim and wash green onions, and slice fine. Peel garlic and dice very fine. Whisk together vinegar with salt, pepper, sesame seeds, and honey. Stir in oils and garlic. Mix carrots and vegetable broth, while still warm, with the marinade and green onions. Allow vegetables to marinate in the refrigerator, covered, for 1 day. Wash chives, and chop fine. Arrange the carrots with the marinade on a platter. Sprinkle with chives and cashew nuts. Marinate for 1 day
